Alicia's Mango Ginger Fish

1 cup sliced
Mango (I buy the jars of sliced mango at Costco or Safeway)
1 spoonful of chopped ginger (I buy in a jar in produce
section)
1 pound of fresh Opah, or Ahi
1 cup of juice for cooking fish (passionfruit, guava or orange)
salt and pepper or jamaican seasoning
Optional
1 tablespoon honey
1/2 cup lite coconut milk

Directions

Place cup
of juice, fish and additional water if necessary in skillet with
seasoning if desired. Cover and cook over medium-high heat. If
needed
add more juice. Fish should be cooked through.
Put mango, ginger and 1/2
cup juice in mini food processor, add optional items if desired.
Process until smooth.
Serve fish on a bed of jasmine
rice seasoned with Nori and seasame. Pour mango-ginger sauce over
fish.
And of course, you can try
other types of fruit, I like using papaya and/or strawberries.
*Cooking with water or juice
instead of oil is a great low-fat method.
