Broiled Maple-Glazed Salmon

1/4 cup freshly squeezed grapefruit
juice (may substiture orange juice)
1/4 cup maple syrup
3 tablespoons balsamic vinegar
2 cloves garlic, minced (optional)
Four 3 to 5 ounce salmon steaks or fillets,
skin on
Salt and freshly ground black pepper
to taste

Directions

In a small saucepan over medium-heat, bring the
juice, syrup, vinegar and garlic to a simmer. Do not boil. Reduce
the heat to medium-low and simmer gently until reduced to 4 tablespoons.
Remove the pan from the heat; set aside.
Preheat the broiler. Line a broiler pan with foil.
Place the salmon on the prepared pan (if using fillets, skin-side
down). Season with salt and pepper to taste and brush with some
of the glaze. Broil for 5 minutes, brushing with the glaze occasionally.
Turn off the broiler but do not open the oven door or remove the
salmon for 5 minutes. Serve warm.
*To minimize the chance of overcooking salmon, adjust
the broiler rack so that it is no closer than 6 inches from the
heat. (This also will help thwart flare-ups that might otherwise
occur when using sugary glazes or marinades.) Serves: 4
